Akar Kelapa

  • Low Cost

Serve: 1 Jar

Shaped like a coconut root, crunchy like a twig

  • 3 eggs
  • 1 egg yolk
  • 100 gram sugar
  • 450 gram glutinuous rice flour
  • 100 gram melted margarine
  • 100 ml (½ glass) water

Don't fry all the dough altogether at once that the pieces stick together, to get a perfectly crunchy result

  1. Beat sugar and egg. Add in glutinuous rice alternately with melted margarine while continuing to beat it at slow speed (slowest speed: 1). Mix until dough is smooth and even.
  2. Pour dough into piping bag with mould attached to its spout.
  3. Squeeze dough out of piping bag to form circle. Repeat until batter is finished.
  4. Heat oil in deep frying pan. Fry akar kelapa until golden brown and dry, remove from heat and strain. Leave to cool.
  5. Once cool, place akar kelapa in a jar. Shut tightly. Store in dry place, and serve anytime.
