According to my father, who learnt how to make this from his mother, anyang timon’s fresh cucumber and strong lime juice taste is perfect for the breaking of the fast during Ramadhan.
Cut cucumber horizontally into 5 pieces. Peel the cucumber flesh in a round and inward motion (just as if you peel an apple) leaving the seeds. Discard seeds. Roll the cucumber flesh then slice it thinly so it looks like noodles. Sprinkle some salt and mix evenly. Set aside.
Blend well spice paste with lime juice.
Mix the spice paste with grated coconut together with the thinly sliced cucumber and bean sprouts until they are blended well.
Serve with sliced egg.
