Ingredients
- 500 g clean beef tripe
- 2 glasses hot water
- 2 bay leaves
- 6 lime leaves
- Oil
- 4 red chilies, deseeded and cut obliquely
- 10 peeled petai (stink beans)
- 3-4 tbsp sweet soy sauce
Spice Paste
- 3 big red chilies
- 5 red bird’s eye chilies
- 3 candlenuts, roasted
- 8 shallots
- 3 garlic clove
- 1 piece shrimp paste, roasted
- ½ tsp salt
Garnish
- Fried shallots
Although this dish features stink beans, the smell of which may be unpleasant for some, but the overall dish does taste delicious
Steps
- Boil the tripe with bay leaves and lime leaves until tender (± 1-2 hours). Drain. Cut tripe into 3 x 6 cm pieces. Set aside.
- Sauté the spice paste until fragrant, add tripe and hot water. Cook until flavor infused and water reduced.
- Add sliced chilies, petai, and sweet soy sauce. Cook until the chilies and petai are tender. Remove from heat.
- Serve with garnish.
