150 gram rice, soak in water overnight then strain
6½ glass (1300 ml) water
300 gram coconut sugar
250 gram lesser galangal
Ice cube and shaven ice
Drink made of lesser galangal, can be enjoyed hot or cold
Bring to a boil water along with coconut sugar and salt, until coconut sugar dissolves. Remove from heat. Strain, and set aside.
Strain soaked rice and put into blender. Pour coconut sugar syrup then blend until smooth. Strain, and set aside.
Pour into serving glasses. Serve cold with ice cube or shaved ice.
When toasting the rice, watch its color changes ensuring that it does not turn too brown and burnt. Toast it consistently on medium heat, and stir it continuously. This recipe has been tested in Dapur Rasamasa (Rasamasa Kitchen).
