Crispy fried gourami with shrimp paste sambal on warm rice
Steps
Coat fish with salt and lime juice evenly. Set aside to marinate.
Rub fish with spice paste. Leave to marinate for 15 minutes.
Deep-fry fish in hot cooking oil until it turns golden brown. Remove from heat. Set aside.
Shrimp paste sambal: Sauté all ingredients except salt and sugar in hot oil until they become tender. Remove from heat. Grind with salt and sugar to a fine paste.
Serve the fried gurami with shrimp paste sambal.
