2 tablespoon vinegar, diluted with 1 glass (200 ml) water

Steps
Bring water to a boil, turn heat off. Blanche beansprout quickly until slightly tender. Strain water.
Peanut sambal: Grind garlic, bird's eye chilies, coconut sugar, salt and ground peanut. Add in vinegar a little at a time until you reach the right thickness.
Heat oil on a work. Deep fry tofu until golden yellow. Remove, and cut into square shape.
Add in cut tofu, beansprout, cabbage and rice cake into the peanut sambal. Mix well.
Add in sweet soy sauce, fried shallot, and sliced celery. Add crackers. Serve.
