1 chicken thigh (remove and set aside skin and fat)
2 cloves garlic, finely chopped
½ whole onion, finely chopped
1 thumb-sized piece ginger, peeled and finely chopped
1 glass of straw mushrooms, each cut into 4 pieces
2 tbsp oyster sauce
1 tbsp sweet soy sauce
½ tsp salt
¼ tsp ground pepper
2 tsp cooking oil

*) Chicken oil, prepare by rendering the chicken skin and fat in 2 tsp of oil at low heat to extract drippings.
Once this process is complete, remove the skin from the pan.

2 teaspoons of sesame oil

2 glasses stock from boiling chicken thigh
1 spring onion, sliced thinly
½ tsp salt
1-2 shallots, thinly sliced and fried
This chicken and noodles with mushrooms a favorite breakfast recipe in Indonesia because it is tasty and simple to make.
Boil chicken thigh until tender. Set aside. Debone and cut the chicken thigh into cubes.
Retain the remaining stock (2 glasses).
Stir-fry garlic, onion, and ginger until fragrant. Add chicken cubes, stir well. Add straw mushrooms and keep stirring. Add oyster sauce, soy sweet sauce, salt, and ground pepper. Stir well and remove from heat.
Noodle Seasoning: mix noodles with the seasoning spices, stir well.
Soup: stir-fry garlic and sesame oil until fragrant. Add chicken stock, boil. Add spring onion and taste. Add salt to taste. Set aside.
Serve noodles in a bowl. Add stir-fried straw mushrooms and pour in the chicken stock. Serve while still warm with a sprinkle of crispy fried shallots.
