Select chayotes that are not too ripe. Rub cut up chayote with salt to tenderize before starting to stir-fry.
Peel the chayotes, slice and rub them briskly with salt until tender. Wash and drain.
Fry the tofu until golden brown. Remove from heat and drain.
Sauté the spices until fragrant, add sliced chayote, stir evenly. Stir fry at high heat. Add tofu and salt. Stir evenly. Continue cooking on high heat until fragrant and flavors mingle. Remove from heat and serve.
