People from Maumere, as do most people of Flores, like bitter tasting dishes. Papaya leaves are a must for the perfect rumpu rampe.
Steps
Slice shallots, garlic, tomatoes, red chilies and bird’s eye chilies. Set aside.
Bring salted water to boil. Add papaya leaves, cassava leaves, pace/noni leaves, and banana flower heart and cook until tender. Set aside to cool. Slice all vegetables coarsely.
Stir-fry shallots and garlic until fragrant and golden brown. Add tomato, red chilies, and bird’s eye chilies.
Add fried anchovies and stir well. Add sliced vegetables. Sprinkle with salt. Stir well. Remove from heat. Serve.
