20 medium sized cubes of pre-cooked Cirebon tofu (can substitute with Sumedang tofu)
3 tbsp sweet soy sauce
5 glasses water
1 tbsp of palm sugar, sliced
20 bird’s eye chilies
Tahu Gejrot, a simple to make and healthy snack, originates from Cirebon. It gets its name from the “gejrot” or sizzling caused when the ingredients are mixed in the pan.
Boil water, sweet soy sauce, salt, and palm sugar. Remove from heat and set aside.
Place spice paste ingredients in mortar. Pour hot sweet soy sauce mixture bit by bit into mortar, while crushing contents with pestle, which will cause the popping and sizzling sounds that give this dish its trademark name. Mix the tofu with the resulting sauce. Serve.
