1 teaspoon rice flour, diluted in 3 tablespoon water

Deep fry tofu served with naturally delicious sambal petis made of shrimp sauce
Steps
Marinate tofu in water, garlic and salt mixture. Set aside for awhile.
Heat enough oil to fry in a wok. Deep fry tofu until golden brown. Remove from heat, and strain.
Sambal Petis: Heat a little oil on a pan. Sauté garlic and greater galangal until fragrant, add in shrimp paste, mix well.
Add in water, coconut sugar, and salt. Bring to a boil. Add in rice flour mixture, stir until it thickens. Turn off heat, remove and leave to cool.
Cut tofu into half ensuring both are not completely separated. Place on a flat plate with the cut sides facing upward, and pour sambal petis in the middle. Serve with bird's eye chili.
