Steps
Sauté the spice paste with galangal, lemongrass, bay leaves, and lime leaves until fragrant.
Add the beef, stir until the color changes. Pour in the thin coconut milk and simmer on low heat until the beef is tender.
Add thick coconut milk, potatoes and palm sugar. Bring to a boil while stirring. Continue to stir until the coconut milk yields oil. Remove from heat. Serve.
