Releasing Aroma of a Root Spice
A strong aroma of a spice, such as turmeric, can really intensify the flavor of a dish such as gulai and roasted fish.
First, stick turmeric on a bamboo skewer or fork. Then, toast it on an open fire on low heat while tossing it once in awhile. Make sure that it doesn't get burn. Once you can smell its aroma, turn off the heat. Last, peel the turmeric skin, and it's ready for use.
